Ingredients:
2 Pound(s) beef, ground
1 peeled and diced
1 cored and diced bell pepper
1 cored and diced chili, jalapeno
8 Clove(s) minced garlic
1 Can(s) beef stock
30 Ounce(s) canned fire-roasted chopped tomatoes
2 Can(s) drained beans, red kidney
4 Ounce(s) canned green chilies
3 in adobo sauce chipotle chili
1 Tablespoon(s) chili powder
1 Teaspoon(s) Paprika, smoked Spanish
1 Teaspoon(s) ground cumin
1/2 Cup(s) vinegar, apple cider
Directions:
In a large pot, brown the beef and set aside.

Use the remaining grease to saute the vegetables: onion, bell pepper, jalapeno, garlic.

Saute until vegetables are soft.

Add the beef stock and deglaze the bottom of the pot.

Add the remaining ingredients: cooked beef, canned tomatoes, beans, green chilies, chili powder, paprika, cumin, apple cider vinegar.

Let simmer for about 30 minutes.

Serve with chopped white onion, grated cheese, sour cream, and crumbled tortilla chips.
